Leftover Roti to Halwa
Many a times, it happens that some food is left from the previous night. Having small kids in my family, I can say that this can be a major problem for house wives. Kids refuse to take the same food to school for lunch. Over the years, I have tried to come up with inventive methods to tackle this. My leftover roti to halwa is one such recipe. Here, I have used eight leftover rotis, which is enough to serve four people. This number can be changed according to requirement and availability. These rotis are ground in a blender jar to obtain dalia-like thick consistency. Sweetened milk (doodh) is added to the mixture and slowly allowed to simmer for some time until it drains. Coagulated milk (khoya) has also been added as it provides a milky flavour and thick texture. Cardamom powder (elaichi) gives a distinctive and fresh flavour to the halwa. This is topped with chopped dry fruits. As a variation, grated coconut can also be added to the halwa for crunchiness. This hot concoction is a kids’ delight.
