Nutritious Pan Cake Recipe
A pancake is a flat cake, often thin and round. The pancake batter is starch-based and it is cooked on a hot surface, like a frying pan. It is very similar to dosa in appearance. In this recipe, Bengal gram (chana dal) and green gram (moong dal) have been used. Chana dal is used as it has high fiber content and it lowers cholesterol. It also tastes extremely delicious and can be digested easily. Moong dal also has high protein and fiber content. It is anti-inflammatory and good for diabetic patients. Chana dal and moong dal should be soaked well before starting. Spices can be added according to taste. Coconut milk is added for binding, and to enhance the flavor. It has a characteristic delicious flavor. The batter prepared should be of light consistency and not too thick. Another advantage of using this recipe is that it uses minimal amount of oil. It is just used to grease the non-stick pan to avoid stickiness. These superb pancakes or cheelas can be served alongside chutney. The chutney can be prepared using coriander, mint, or tomato.
