Doodh Pak Recipe
Doodh Pak Recipe is a thick cream dessert, which is full with goodness of milk. It is a Gujarati dish, which is filled with delicious flavour aroma. Although, it is prepared in all Gujarati families but specially made on Naraka Chatudasi. It is a kind if rice pudding, made up of rice, milk, saffron and nuts. The milk is slow boiled to thickened and sweetened. Then rice is added and cooked till it is done. The cardamom and saffron is added towards the end complete the royal feel of the dish. It is served both and hot and cold. Doodh pak is milk boiled till it becomes a bit thick with rice. It’s not as thick as kheer.

How to make Doodh Pak Recipe
Ingredients |

Rice (chawal) | 2 table spoons |
Milk (doodh) | 1 liter |
Sugar (chini) | ½ cup |
Cardamom (elaichi) powder | ½ tea spoon |
Saffron (kesar) | 8-10 |
Almond (badam) | 2 table spoons |
Pistachios (pista) sliced | 2 table spoons |
Method
- 1. Dissolve the saffron in 1 table spoon of milk and keep aside.
- 2. wash rice and mix, add clarified butter and mix well.
- 3. Boil milk in a heavy bottomed pan.
- 4. Add the rice, mix well and simmer well till rice cooked completely.
- 5. Add the saffron, sugar, cardamoms and cook on a very low flame till thick.
- 6. Sprinkle sliced pistachios and let it cool at room temperature and serve.
