Corn Salad
My kids absolutely love sweet corn. Whenever we go out, they insist on buying those boiled, seasoned sweet corn cups to munch on. While my kids do have some unhealthy food choices, I completely agree with them on this one. Sweet corn contains a lot of fibre and is a great antioxidant. Moreover, it makes for a wholesome snack. I often prepare Corn Salad at home. I combine sweet corn with tomatoes (tamatar), cucumbers (kakdi) and onions (pyaaz) which results in a variety of different textures and tastes. The crunchiness of onions goes along smoothly with the juiciness of sweet corn. For the salad dressing, I have blended cream with red wine vinegar and olive oil, besides some spices. These spices can be added according to taste. Cream and corn are an awesome twosome and impart a delectable flavour to the salad. Corn Salad is to be served chilled. Corn brings its own brand of sunshine to the dish and makes for a delicious treat.

How to make Corn Salad
Ingredients |

Sweet corn (boiled) | 2 cup |
Cucumber diced | ½ cup |
Onion diced | ½ cup |
Tomatoes chopped | ½ cup |
Fresh cream | 4 table spoon |
Salt | to taste |
Black Pepper | to taste |
Red wine vinegar | 1 tea spoon |
Olive oil | 2 tea spoon |
Fresh coriander finely chopped | 4 table spoon |
Method
- 1. Combine corn, cucumbers, onions, tomatoes in a bowl.
- 2. In a separate bowl, blend cream with salt, pepper, vinegar, olive oil and chopped coriander.
- 3. Add cream mixture to corn and toss gently to coat. Chill and serve in large bowl.
