Jhuri
It is rightly said that the way into a man’s heart through his stomach. And what better way to impress him than lay a bevy of fried snacks in front of his eyes? Fried snacks are a super hit with the Indian crowd. And a hot cup of tea to go along with it, with the rain drops pouring onto the window sill is just the ideal setting to fry these fabulous fritters. Jhuri is from the land of Bihar perfectly fit the bill and warm up your heart in no time. This fried snack incorporates crispy gram leaves (chana saag) into the batter, along with gram flour (besan) and rice powder (chawal ka atta), which gives body to the dish. A few spices have also been added, which can be done according to taste. A little bit of black gram (urad dal) can also be added to the batter to provide that extra flavour. This mixture is then fried in hot oil, and we get nicely cooked golden-brown jhuris. They can be served with dal and rice, as Jhuris are just the snack you need to brighten up other mundane dishes.

How to make Jhuri

Gram leaves (chana saag), finally chopped | 2 cup |
Gram flour (besan) | 3-4 table spoons |
Rice powder (chawal ka aata) | 2 table spoons |
Onion (payaz), thinly chopped | 3-4 table spoons |
Green chilli (hari mirch), chopped | 2 table spoons |
Cumin (Jeera) | 1 tea spoon |
Turmeric powder (haldi) | ½ tea spoon |
Salt (namak) | to taste |
Mustard oil (sarso ka tel) | for frying |
Method
- 1. Take gram leaves, gram flour, rice flour, onion, green chillies, cumin seeds, turmeric and salt in a bowl.
- 2. Mix them well with hands. Sprinkle littler water if required.
- 3. Heat oil in pan.
- 4. Take a small portion of mixture and drop in hot oil.
- 5. Fry till golden brown and serve with dal and rice.
TIP
- sometimes soaked and crushed black grams can also be added to the mixture.
