Ingredients |

Basmati Rice | 2 cup |
Vegetables finely chopped (beans, carrot, cauliflower) | ½ cup |
Capsicum (shimla) finely chopped | ½ cup |
Peas (matar), boiled | ¼ cup |
Onion (payaz) finely chopped | 1 cup |
Tomatoes (tamater) finely chopped | ½ cup |
Ginger-garlic (adrakh lahsan) paste | 1 tea spoon |
Green chillies (hari mirch) chopped | 2 tea spoon |
Pav bhaji masala | 4 table spoon |
Kashmiri chilli powder | 1 tea spoon |
Turmeric (haldi) powder | ½ tea spoon |
Salt (namak) | as per taste |
Butter (makhhan) | 2-3 table spoon |
Vegetable oil | 3-4 table spoon |
Lemon juice (nimboo ka ras) | 1 table spoon |
Green coriander (hara dhaniya) | 4-5 table spoon |
Method
- 1. Wash and soak rice and keep it aside for 30 minutes.
- 2. In a pot, boil enough water with salt and ½ tea spoon of oil. Add the rice to the hot water and cook it without the lid.
- 3. When the rice becomes just cooked, remove the pot from fire and strain the rice. Let the rice cool properly.
- 4. Finely chop french beans, cauliflower and carrot and keep aside.
- 5. Finely chop the onions, green chillies, tomatoes and capsicum. Keep aside.
- 6. Boil peas and keep them separately.
- 7. In a pan, heat vegetable oil and add the chopped onions.
- 8. Sauté the onions till they become translucent. Now add ginger-garlic paste.
- 9. Sauté till the raw aroma of the ginger-garlic paste disappears add the green chillies and tomatoes.
- 10. Cook tomatoes till they become soft and oil separates from the sides.
- 11. Now add the chopped vegetables and cook them till they become soft.
- 12. Add the chopped capsicum and sauté it for 2 to 3 minutes.
- 13. Now add the salt, red chilli powder, turmeric powder and Pav bhaji masala and stir it well.
- 14. Add boiled rice and mix it with a light hand. Now add lemon juice and chopped corianders.
- 15. Serve hot “Pav Bhaji Rice” with onion rings.
